Macaroni and cheese variations
Based on Annie’s Shells & White Cheddar (or Trader Joe’s equivalent)
Make sure the water is actually boiling. Use a large amount of water so the water will continue to boil after adding pasta. Boil pasta for 4:30 minutes, drain.
Option A: Truffle oil
Mix cheese powder in a small, round-bottomed dish with 20 g half-and-half (or 30 g heavy cream). Will form a thick smooth paste. Add three drops of Urbani black truffle oil, mix thoroughly. Mix into pasta. Grind small amount of black pepper onto pasta, mix.
Option B: Rarebit
Mix 0.75 grams of Worcestershire sauce with 0.75 grams Colman’s wet mustard in a small, round-bottomed dish. Add 0.25 grams ground black pepper and 20 g half-and-half (or 30 g heavy cream). Mix. Add cheese powder, mix. Will form a thick smooth paste. Mix into pasta.
Option C: Oregano
Mix 1.00 grams of black pepper with 0.50 grams oregano in a small, round-bottomed dish. Add 20 g half-and-half (or 30 g heavy cream). Mix. Add cheese powder, mix. Will form a thick smooth paste. Mix into pasta.
Option D (Liquid Smoke)
Mix 0.40 grams of Wright’s hickory liquid smoke with 20 g half-and-half (or 30 g heavy cream) in a small, round-bottomed dish. Mix in 0.60 grams black pepper. Add cheese powder, mix. Will form a thick smooth paste. Mix into pasta.
